One of the most esteemed products, is born and grows completely underground in symbiosis with oak, willow, lime and poplar trees. Depending on the type of tree where it grows, it develops a different
intensity of flavour and smell, and is distinguished by the colour that can be white, or beige with light veins running through it. The truffle search starts in October and last until January, and is surrounded by
an aura of mystery.
The truffle is to be consumed fresh and its intense aroma enhances simple dishes such as raw meat, tajarin pasta and eggs.
