They are sweet handmade delicacies, made the same way today as the recipe used twohundred years ago, using only first class ingredients. The sweet and /or bitter almonds, aremixed with the sugar and part of the egg white, then using the mixer, the remainder of the eggwhites are added. The mixture is then broken up, worked by hand and cooked, where itassumes the classical shape of an amaretto.Once it has cooled down, it is wrapped in paper, and maintains intact its fragrance and softness.The secret of the “Amaretto di Acqui”, besides the use of first class ingredients, is the wiseprocessing of the master baker that doses and balances the quantities of hazelnuts and sugar,that together create that pleasant bitter sweet flavour.
