They are sweet handmade delicacies, made the same way today as the recipe used two hundred years ago, using only first class ingredients. The almonds sweet and/or bitter, together with the sugar are
mixed with a part of the egg white, then using the mixer, the remainder of the egg whites are added. The mixture is then broken up, worked by hand and cooked, where it assumes the classical shape of an
amaretto. 
Once it has cooled down, it is wrapped in paper, and maintains intact its fragrance and softness. The secret of the “Amaretto of Acqui”, besides the use of first class ingredients, is the wise processing of the
master baker that doses and balances the quantities of hazelnuts and sugar, that together create that pleasant bitter sweet flavour.
